Low Fat, Low Carb Berry Protein Muffins

A guilty-free recipe for nutritious berry muffins!


Preparation time: 10 mins 
Cooking time: 40 mins
Serving size: 12 muffins


    Ingredients

    • 1/2 cup VitaClassic Syrup

    • 1 1/4 cup all purpose flour 

    • 3/4 cup vanilla protein powder 

    • 1 T baking powder

    • 1 t salt 

    • 1 egg 

    • Juice of one lemon

    • 3/4 cup skim milk

    • 1/3 cup coconut oil 

    • 1 1/4 cup berries (blueberries and strawberries shown)

     

    Streusel Topping (optional):

    • 1 scoop protein (2 oz)
    • 2 oz all purpose flour 
    • 1 T coconut oil
    • Mix together until crumbly

     


    Directions

    1. Warm oil until liquid in microwave, approximately 30 seconds. Add egg, VitaClassic Syrup, lemon juice, and milk. Mix thoroughly. 

    2. In separate bowl combine flour, protein powder, baking powder, salt.  

    3. Add liquid bowl ingredients to dry bowl, then add berries and stir gently.  

    4. Pour into muffin tins, 2/3 full. 

    5. Bake in 305 degree oven 40 minutes or until toothpick inserted comes out clean.
