Ube (Purple Sweet Potato) Spread

A simple and versatile spread for the ube (purple sweet potato) lover! Packed full of antioxidants and great for your gut health.

Tip: Add room temperature Coconut Oil for more creaminess! Serve it with toast, pancakes, or waffles, or sandwich it between two cookies!

    Ingredients

    • 2 Tbsp VitaClassic Syrup

    • 200g Ube (Purple Sweet Potato)

    • 1/4 cup Coconut Milk 


    Directions

    1. Peel the ube, dice into small cubes, and steam it on high until soft (about 15 min).
    2. Allow the cooked ube to cool down.
    3. In a food processor; add the ube, coconut milk, and VitaClassic Syrup. Blend until it is creamy and smooth; add more coconut milk by the teaspoon if it is too thick.
    4. Transfer the ube spread into a jar and allow it to harden in the fridge before serving.
