This VitaFiber® Vanilla Icing is great to put on our VitaFiber® Gingerbread Cookies.
- 2 cups sifted VitaFiber® IMO powder (sifted after measuring)
- 1 tablespoon (15 ml) low-fat milk
- 1 tablespoon (15 ml) VitaFiber® IMO syrup (more if needed to reach desired consistency)
- 1⁄2 teaspoon (2.5 ml) almond extract
- 1⁄4 teaspoon (1.25 ml) vanilla extract
- In a bowl beat the VitaFiber® IMO powder with milk until smooth.
- Beat in VitaFiber® IMO syrup, almond extract, and vanilla extract until smooth and glossy (if icing is too thick add in a small amount of VitaFiber® IMO syrup).
